I am a bit of a newbie with macOS Catalina but when I run Finder, it does not show any 'Devices' as earlier macOS offerings did e.g. El Capitan. Instead of Devices I get Locations plus iCloud and as I am copying large amounts of data from a USB memory stick to the hard disk I don't want to make any silly errors with the from and to locations.

is it possible to configure Finder to include the root of each device

Try opening Finder preferences.

Locations has been replaced by Devices in the sidebar, but functionally it's about the same. Finder > Preferences > Sidebar will allow you to customize what appears there.

If you see the word Locations but nothing listed below it, hover your pointer over the word to reveal the Show/Hide option.

You can add folders to the Favorites category with a drag/drop onto the word Favorites.
