configuring itunes for new unlocked iphone.

So my unlocked iphone is in the mail. Are there any settings I need to check before I plug the iphone in? I'm assuming when I plug the phone into my mac itunes will ask me to update the phone... which im assuming I say no and check the never ask again box?

Also... once I do that i'm assuming its same to sync all my stuff from itunes?

Anything else I need to watch out or?
