I am not a total noob to iPhones, I am using one that I got from my employer a few years ago. But I am getting close to retiring and will need to turn it in soon. I will probably be getting a new personal iPhone and want to basically clone the apps over with the exception of the work related stuff. I am not using iCloud, I have the current phone backed up to my PC via iTunes software. I used that once to clone the apps to the current 6S from the original 5C they gave me. That was pretty easy and worked great.

I want to create a new Apple ID for the new phone since it is my work e-mail address, although I guess this really wouldn't be necessary. But if I use a new Apple ID for the new phone will this affect my ability to do what I want to do? Ideally, I'd also like to erase the original phone before I turn it back in.
 
When you are ready to turn the phone in, go here: https://appleid.apple.com/#!&page=signin

Sign in, then add a new email address. Change your old email to this new address for your Apple ID. You will then be forced to enter the new credentials on the device. Delete anything that's work related (email accounts, apps, etc)

Back it up to iTunes then wipe the device, then turn it in.

When you are ready to restore to your new personal device then just use the backup you made in iTunes. To sign in you'll use the new email address you added to your Apple ID.

There's no need to create a new Apple ID when you can just change email addresses for your current Apple ID.
