I'm moving a home network to an office and adding a switch, so I want to make sure I plug everything in in the right order. Is this the correct path?

internet -->Airport Extreme base station --> switch --> xserve

If I understand correctly, everything in the office needs to be on the "other side" of the Airport Extreme Base Station, right?

Depends on how you're connecting to the internet. You could plug in your cable modem or DSL modem into a switch (if it doesn't already come with one included), and then plug the AEBS and the Xserve into the same switch.

OP, I'd do it the way you have it listed. That's the norm for most people.
