Nice guide, but surely in needs to be appended as some macs have digital optical audio outputs.

True. However, only certain apps can pass through Dolby Digital through these outputs. And since no Macs have a chip that encodes to Dolby Digital in real time, 99.9% of what gets passed through that optical port is regular old stereo.

Is it me, or does including an optical digital audio out seem completely pointless if it wont carry 5.1 due to a lack of appropriate hardware in the mac?

It is useful for some things. For instance, when I'm in my basement, I used a 15' optical cable to connect my MacBook up to my receiver, which will be amune to interference and ground loops. Although it's only stereo, it sounds a hell of a lot better then using the internal digital to analog converter. But for DVD's it allows for the bitstream to be decoded externally, which can be useful in a home theatre environment.

http://www.griffintechnology.com/products/firewave/ im not sure what this is but i found it in the thread.. is this what ur talkin about? n if not what would be 1 of the best usb soundcards?

Ok, first, start using capitals and proper english. ;)

The FireWave would be the best and easiest solution. I didn't realize it was so inexpensive, I am now almost tempted to get it. So yes, get the FireWave and you'll be set, installation should be simple and you won't likely have to use my guide.
