I moved up in the world to the iPad Pro 11” from an old original iPad Air. The new model has the USB-C connector so I know that I will need to get some form of adapter to connect other devices to this model. Now I do read reviews and it seems the Apple Store is swamped with really bad reviews of all their plug adapters, to the point I don’t really want to try using them if there are so many failures offer a week to two of using them. So what is the best alternative??

I have purchased the Apple Pencil2 so it would be nice to have some way to do photo editing when out. I have a Canon5D3 so it uses mostly the CF cards but can write badly to an SD. Ultimately it would make sense just to hook up a card reader. I have an old Lexar reader that has a mini USB port. I don’t know if it would just take buying a USB-c to USB mini data cable to get that working. As well, I have a midi keyboard that would be nice to play with garage band software. Again that is a mini USB connector. I do have a set of Bluetooth headphones but would be better to get a USB-c to 3.5mm audio headphones converter. Then you start thinking perhaps a USB-c hub with some USB-a ports, an SD card reader, a USB-c pass through charger would make more sense.

What are others using? What works? What clearly should I stay away from?

You could take a look at Hyperdrive USB C adapter for iPad. It comes with USB A, SD/MicroSD reader, 3.5mm Audio jack, USB-C and HDMI. I backed them on Kickstarter and have been using it with no problem, even works well on my MacBook Pro
