Hello,
hope here for help :)

I'm already looking for the whole morning for a guide or tool:

I would like in safari in the "right click" / "context menu" the option/item: "translate with mate..." move up to one of the first positions. In best directly behind "search with google".

It's unlikely that you can do this. An application is actually a package. You can look at the contents of the package by hitting control escape and then clicking on the application. A popup menu will appear. Click on "Show package contents". Some resources are stored there, for example images but the .xib files with templates for windows, panels, menu bars, etc. are compiled and you can't see or edit them. Also these are linked to actions in the application and if you renamed them they would still do what they did before.
