Why has Apple increased the steps? It's made the shortcut functionality of control centre redundant if it's easier to find the app to open it.

You can at least when playing music open from Notification Center.

I think overall the new control centre is an improvement, but I don't understand why you can't have some things resized, like the music controls...

Swipe down to reveal the lock screen / Notification Center and you have literally all the same music functionality from the old control center, including one tap to open Music.app

You technically left a step off of iOS 10.

Oddly I hadn't thought of this until I read your thread. Suddenly I kind of like iOS 11s implementation better, as it's more versatile. Glad I could help!
