iPod converting avi to ipod/itunes with quicktime

hi,

i'm looking for help with the best settings in quicktime to convert avi video files to a format that will create one file that will work on an ipod and in itunes. getting decent quality in itunes is the problem.
the files take a while to convert so i'd like some advice to save time.

The best settings would be had by not using Quicktime.

Use HandBrake or iSquint.
