Any ideas on how we will be able to add music (not in Apple Music) to the new Music app without iTUNES...or convert MP3's or rip CDs into AAC files?

Wondering this too. I use this feature quite often. It's possible that CD ripping will go away as no Macs had been sold with a drive since 2016.

I've said this before, but as long as I can still use the iTunes store on my old iTunes installs, they can do whatever they want to it.

A least as long as you can still buy a superdrive from Apple I would expect (hope) CD ripping to continue.

As for file conversion you can right-click in the Finder. It defaults to the preferred format in iTunes/Music.

I think you just add new music to the library via music app. Nothing too crazy here.
