I am looking into some stick figure animation for a new app I'm making. What I'm wondering is, would core animation be the way to go? If so, could anybody lead me to a good iphone core animation tutorial? I can't seem to find one. Any advice is greatly appreciated!

Core Animation is really handy for applying matrix transformations to a (whole) bitmap image. These are transformations like scaling, transposing, shearing, and rotating.

If you want pixel-by-pixel animation, I think this is really more of a job for OpenGL.
