Hi. I had the iPhone 6S Plus's screen replace, I had removed the SIM and there's no wifi there. Could I remotely erase or reset the iPhone even without Wifi (they have no Wifi there at the repair shop or are not allowed) or SIM card?

The phone needs to be connected to a network to be able to remotely wipe it.
The shop doesn’t need wifi. They could use one of their smartphones as a hotspot.

I am not 100% sure but there might be possible to lock it remotely if the shop hooks it up to Itunes on a connected PC.
Also, they won't be able to get into it if they don't have your passcode. If you have set "erase data after 10 attempts", the phones not jailbraked and you have it updated you are fairly safe if you feel worried about them accessing your data.

Hi, it needs to be connected to the internet either through Wifi or Data, it can't be erased if the screen is detached.
