I just bought the iphone 5 and sadly it came with 6.1.3, which I was prepared for however.

Since I've read that there shouldn't be another jailbreak until ios 7, I wanted to know if it is possible that apple could finally prevent jailbreaking altogether. The thought that they could do that makes me nervous seeing how much I've missed my jailbroken iphone 4 after going to a S3.

Another question I have is difficult to phrase, but I want to know if I am able to upgrade the OS to a specific version as long as I'm on an earlier version. For instance, say I have 6.1.3 and 7.0.0 and 7.0.1 are available. Could I manually pick 7.0.0 to update to. I ask this in case apple does a quick update to break jailbreaking and I don't manage to get the right OS in time.

I highly doubt Apple can forever block jailbreaking.
They can make it harder but not stop it completely.
On the other question currently with an iphone 5 or 4S you can only restore the phone to the firmware version that is signed by Apple.
If 7.0.1 is out for example and they stopped signing 7.0 then you can only restore/update to 7.0.1
You gotta be quick and stay up to date if you want to JB.
