All I know is istat: https://www.apple.com/downloads/dashboard/status/istatpro.html

Not sure but there may be another thread on here or there are other applications that tract cpu usage and temperature.

hmmm... Just checked now it loads fine on my end. Not sure what's causing the error 404

MenuMeters is free, iStatMenus is not, and since the last version it logs to disk (4.x), annoying writes every few seconds, said they fixed in the latest built, NOT.

No worries, it's not as flashy as iStatMenus and does not have sensors but it uses less resources and it's an oldie.

No Mac Pro Xeon support though. Only newer i3/i5/i7 Sandy and higher kit.
