I'm trying to get a hidden network going via "Create Network" in the AirPort menu, and there seems to be no way, under Mountain Lion. IIRC this was an option in older versions of Mac OS. Any ideas? Using mid-2011 iMac.

In airport utility -> go to wireless -> wireless options -> there is a tick box "Create hidden network"

Sorry, should have clarified. I'm creating an Ad Hoc network from the AirPort Card, as you can in the AirPort menu... no AirPort base station involved.

Ooo, yeah you can't. but really there is no point in creating hidden network, someone can still spoof the SSID.
