That is actually a complaint of mine that you can't organize photos or make new folders on the iPhone. To have photos in a separate folder on the iPhone you have to sync with iTunes.
 
I have all my photos in 1 folder called "camera roll"

How can I add folders so I can organize the pics ?

You have to do it through iTunes, can't do it on the iPhone.

I don't know how to do it if you're using a Mac, but on a Windows-based PC:
I'm not sure if there is automatically an iTunes folder in My Pictures, but I have one there.
Create a new folder in the My Pictures >> iTunes folder and name it whatever you want.
Then go to the photos tab in iTunes (with your phone connected) and tell it to also sync that folder.

Make sure you don't have any images that are in your camera roll (or any other folder you create and sync) in another folder that is also synced. If you have double images, iTunes will also create another extra folder on your iPhone with all of your images in it. It's annoying and unnecessary.
 
This is a complaint of mine too. Hopefully this will change when the iPods get cameras. Ideally, the Photos app would sync with MobileMe and I could create and manage the albums directly on the iPhone. Rather than sending a pic to MobileMe, I would move a picture to an album and it would sync behind the scenes, just like bookmarks.

It's ridiculous that I have to take a picture, then sync it to my computer, then sync it back to my phone in an album that is completely independent of my MobileMe albums.
 
Sending photos to my mobile me account

I have a master account on mobile me & then a number of sub accounts for the family emails.

When I try to upload photos from my iphone 3GS, it is selecting one of the sub accounts & not my main one. Is there a way of manually changing it to default to another email account??
