Is the memory on the current iMac's and HDD upgradeable, or is this like the MBP and everything is soldered to the logic board, I think it is soldered, but have a friend who wants to buy one for his wife?

The 27" one has user upgradable RAM.

RAM on the 21" and internal storage in both require taking apart the computer almost completely and is not recommended.

You can also add an external drive, over TB3 it's quite fast.

They are replaceable, however the 27 inch is the only one where the ram is easy to replace with a RAM slot the 21 inch involves opening up the whole unit and gluing it back together.

The drives are the same they can be replaced and upgraded but you need to open up the whole unit.

I order new iMacs yesterday from B&H and got $150 off each plus no shipping or sales tax. I ordered 8MB memory and have 16MB from Crucial ready to load. I ordered 512SSD as I do not want a HDD inside an iMac (it will fail, it is only when) and you get getting speed/performance using an SSD. We only need 512 SSDs as we have large extra HDD arrays to house our libraries of files plus our Time Machine backups.
