Hi

To simplify matters (though it’s giving us a headache so not sure simplify is the right word, at least not in the short term), my wife and I have decided to discard our old hotmail email addresses that invite thousands of spam emails a day in favour of a family custom domain.

Here’s the problem. We both have separate apple IDs, both with iCloud+. I’ve set it up on my account, followed all the instructions to change the dns over on the namecheap site, created an email address using my domain in the iCloud settings, and it’s working great!

Helping the missus set it up on her phone now and I’m a bit lost, if I’m being honest. Went to Apple ID > iCloud > custom email domain in the settings app and added the domain under the ‘add a domain you own’ section. She’s now been sent an email of the domain records by apple. Do I add this to the dns on namecheap too?

I believe you would skip the DNS part and just create the new email address, but Apple's instructions here are not great.
Followed this and after an embarrassing amount of time we finally managed to make it work, thanks!

Another question: I have an old personal domain I use with another email service. Will I be able to use it both with iCloud+ and that service at the same time? Would it work if I add both dns records at my registrar?

That won't work. You could probably put the extra MX records in, but your incoming messages would be split between two different providers, and you can't specify more than one incoming server in your mail clients so messages would be lost.
