All Devices Customizing names that show under share menu

When I choose the share option I get different options on my iPad and iPhone and they are both running the latest os. I seem to have the option on my iPad to quickly send an email to someone though I don’t ever see that on the iPhone. Is there a way to remove some names that you don’t want to display and others?

As far as I can tell, no. Looks like it's per-device, and based on usage to some degree.

I would like to know if there's a way to edit this, too.

On my iPhone, I see an oddly formatted version of one contact, with their name in all lower-case. I've never entered it this way anywhere, so it's a mystery as to why iOS 13 is presenting it this way.

Also, the options are inconsistent, making me think there's some kind of Siri suggestion / machine learning in action to generate the options…

It’s suggestions based on usage. Not sure why names look weird. My contacts names in that list is correct and shows nicknames as well.
