I just updated from HS to Catalina (10.15.6) and have a few issues I can't seem to solve. One is that the dark mode doesn't stay dark. Whenever it's been on sleep for a while (>few hours/overnight) it changes to Light. What gives? Is there anyway I can force it to stick through the terminal or something? I've seen a lot of grumbling about similar issues early on but thought it's been fixed by now, no?

Dark mode's auto switch was always bugged in Catalina. Thankfully it's fixed in Big Sur. Night shift would work fine but I had to always toggle manual dark and auto for it to switch to dark from light. going from dark TO light worked 100%. It's some server that Catalina fails connecting with when it's supposed to switch. Setting it manually breaks night shift and it won't auto switch either way for me.

Just to make sure... You do have it set to Dark Mode and not Dynamic/Automatic, where it switches between light and dark depending on time of day, yeah?
Yes, it's Dark, not auto

Not using auto. I click Dark and it switches to Light. Not using night shift either, prefer f.lux. Unfortunately my 2012 is not supported in Big Sur :(
