Why are we paying for a phone that excludes us from certain, and yet important, software? I still don't have a swipe keyboard for my language. And that means that I won't be getting it on the Watch Series 7...if I buy it.

Dear Apple, where is swipe keyboard for other the rest of us?

Because Apple, like most US companies is US-centric. USA is the centre of the world for them. I have been waiting for Apple Pay, Apple News for years and Fitness+ recently, nothing.
Still, earlier I was in the MS ecosystem and things were much worse there.
Exactly. US is all that matters for Apple. The rest of the world may, just may, get some of Apple's services (or at least some dumbed-down versions of them) at some indefinite point in the future.
Luckily there are other options for the rest of the world. Google Maps, for instance. Or, in the specific case we're talking about, you may wish to give Swiftkey a try. Not only does it know a lot of languages, but it's also really, really good, much better than Apple's implementation.

Which country do you live in? We in The Netherlands are finally getting the Dutch swipe keyboard (QuickPath) in iOS15:

I was already using the English version quite a lot. Until it arrives in your country you can choose between Gboard (by Google) and SwiftKey (by Microsoft) probably since they have much more languages they support. You do want to check first your settings what you allow them to access though since they are not as privacy concerned as Apple is.
I agree with you that it is quite bizar that Apple is taking so long to support more languages for e.g. QuickPath or any other Apple services for that matter to support in different countries. I understand that for certain music or video services where local rights are involved it can take longer to offer certain things but other then that they have a lot of employees and money to support their users worldwide.

For those suggesting third party keyboard, keep in mind that they don’t blend with the test of the OS. There’s a gab at the bottom where the homebar is, and you cannot color blend it to match The keyboard

I've no problem with that concept, as long as said company puts its money where its mouth is and sells its products exclusively in the US. But if it's happy to sell worldwide, that reeks of hypocrisy.
Fortunately there are other American companies whose focus isn't so biased. Those can fill the gap.
I don't know what you mean. I don't see a gap at the bottom.
My only problem with Swiftkey is that it spoils me. On the odd occasion that I have to enter a password and the default iOS keyboard appears instead (because iOS doesn't allow third party keyboards in password fields), it looks and feels sooo incredibly primitive. You don't realize just how primitive it is, how uncomfortable it is to use, until you've tried something else.
