So... how can there be so many bugs/quirks in the GM release? I know you report them but what kind of feedback does Apple give you when you pass them along? How does the program work?

Think of it like ice cream, or candy. You send it to a small subset of people and they work on the flavour until they get it mostly right (BETA). Then it's released to the masses (GM) and they all sample the flavour and most love it, but there are a few that don't agree with the taste, so they tweak it some more (10.7.1).
 
I personally haven't experienced any issues using Gold Master, I have heard of people having issues with mission control, but I think that likely related to a GPU bug..
 
They've got a deadline to meet at this point. They clean up what they can and fix the rest with the 10.7.1 release a couple weeks later. That's how they've always done it.

so ... you're suggesting that you're running lion GM without being a developer?

Normally you have to post a short description of the issue, provide steps to reproduce it (if necessary), give info how often it happens and eventually send log files. Depending on the issues Apple might ask for more information. When a new build is released Apple asks us to confirm if the bug was solved. This doesn't happen for all bugs, but only for a small subset.
