Safari is the default browser that is built into iOS. Various apps can give options to open in other browses as you mentioned. No one really knows when or even if Apple will change anything related to default apps and ability to set other apps as default. Given that they just now started allowing for removal of some default apps, perhaps something like that might happen in the future.google apps allow external links to open in chrome so it should be a easy inplementation for 3rd party apps, yet apple still forcing safari on everyone even though it's a poor browser.
