I was not able to change the icons while doing the jailbreak but now that I have SSH setup and new icons, can you change the Pinapple and Steve Jobs icons for Boot and Recovery after a jailbreak?

If so where are they located on the file system, I started snooping but I have no clue where they are.

You are talking about the boot logo. It can only be changed at the time of jailbreak because they are not stored in the filesystem. Redsn0w 0.9 beta can change the boot logo, however, if you run it on an already-jailbroken device. Just be sure to uncheck the option to install Cydia, since installing Cydia over a previous copy can cause problems.

Also check the previously pwned box so it doesn't try to re-JB the phone.

I used the Mac Version of Redsn0w a couple of days ago to change my boot logo on a previously pwned 3GS, worked perfectly.

Yea, just changed the boot logo again, with new, improved Redsn0w 0.9 beta and again, worked perfectly on 3GS (old bootrom) MacBook SL 10.6.2
