Every time I attempt to save a document, on Mac OS X 10.8, the default path for it would be to save it in iCloud.

Is there anyway to change that default? Because I do not like using iCloud to save documents such and Keynote presentations and Pages Publications.

In System Preferences open the iCloud pane and uncheck "Documents & Data" and that option will go away. Of course this means no documents will sync to iCloud.

Search for "Mountain Tweaks". With it you can "tweak" hidden preferences. etc, including setting the default save location to your HD (Keeping iCloud functionality intact).
