Once I finish up my first project, I would like to then start working on my 2nd project, which I would like to emulate one of my fave arcade games, Stargate. My first project, I really didn't know much about what templates work best with certain types of games, and might have cornered myself into "Single View Application", when one of the others might have worked better. So, if I am to emulate Stargate, what platform should I start out on? "Single View" again, or maybe "SpriteKit", or another one?

Since you're talking about making a game, I'm going to say none of them. Use Unity instead.
 
A few weeks ago I started learning Cocos2d. This might be a good choice for you to start at. Cocos2d has many features including great collision detection as well as physics. It will have a much easier learning curve then Unity. I tried Unity and it is very cool but you will have a learning curve with that system.
 
TrentS, you also need to be careful you don't raise the ire of the copyright owners of Stargate, who might decide to sick their lawyers on you.

I cannot find Stargate anywhere for the iPad. So if I create the game and put it on my iPad for my use only, why would they sue? Also, I never said I would make it exactly like their game. I'd change it up, make it my own game.

That's all moot anyways. I'm just hoping I can code it, that itself is a stretch for me at this point.

You can use it personally, but the name Stargate etc, is of course copyright and so is Defender actually. :)

If you create a version for your use only, sure the copyright owners probably won't find out but, technically, you've still violated their rights. Just because there isn't already a Stargate for the iPad, doesn't mean the copyright owners of Stargate for any other platform have relinquished their rights to the game. And, if you even consider distributing the app, you'll want to be sure that you change your version significantly different enough that they don't think they still have a case. You might want to seek the advice of a copyright lawyer before you publish the game on the App Store, if you were to go that direction. Just look at what King Games have been doing to other developers of 'Candy' apps.

He should be ok. If the first person to make a fps had the rights for all subsequent fps style games we wouldn't have the call of duties, modern war fares and so on.

I think as long as he puts his own spin on the genre he will be fine.

Op, good luck with the game. If flappy birds can make 50k a week then it's worth having a go. I would make one suggestion, angry birds, flappy bird, snap chat, etc.. All of these successful ideas are so simple. Take a photo, show for a second then delete, pull a sling shot and shoot a bird, etc. I think you'll have more success in the market if stick to the core concept of the game.
