"Delete Account" - iCloud

I'm sort of a 'manual override" type guy, and generally 'turn off' most of the stuff (apps/options etc) on my Mac (Ventura). I don't use iCloud and am in the process of trying to stop those "reset end to end encryption" (first screen shot). What happens if I "Delete account"? (2nd screen shot). "Delete account" sounds serious... Thanks
