Is there a way to delete emails from the iPad but still retain them on my iMac computer? For the same token by deleting emails from my iMac can I keep them from being deleted on the iPad? Thanks for a reply.
 
Unless the iPad mail app is completely different to every other mail program on the planet you should be able to set a preference to "never remove from server" or something similar. You should also have options that relate to deleting from server when you delete from mail etc.

I say "should" as my iPad is still floating around the planet somewhere for apparent delivery May 28th so I can't tell you exactly.

Your second scenario should be automatic behaviour.

Both of these comments are in relation to POP3 style email accounts. IMAP may be different and Exchange definitely will be.
 
IMAP and Exchange are basically looking at mail stored on a server with a cached copy locally. If you delete an email then it will be removed from the server and therefore every other device accessing through either of these methods.

As WytRaven said you would need to use POP3 somewhere to do this.

Gmail archives on computer when you delete on iPad. Not exactly the same but close.
