So here's the deal: when someone sends me a message, I get it on both my iPhone and iMac. All replies to the conversation sync just fine between both devices. However, if I delete a conversation from my iPhone, it doesn't delete from my iMac. And if I delete a conversation from my iMac, it doesn't delete from my iPhone. What gives?

That is normal. But I agree with you in that once deleted from one device it should be deleed from all devices. I don‘t like having to do it From each individual device.

I just can't accept that this is normal. If I delete a reminder from my iPhone or Mac, it's deleted from both devices. Same for contacts or calendar events or notes. Why would Messages be any different?
 
Do you have Text Message Forwarding enabled for your iMac? (Settings-->Messages-->Text Message Forwarding on your iPhone). Probably not it, but it's the only thing I can think of. My messages seem to delete across two Macs, an iPhone and an iPad.

Yes, I do. But whether it's an iMessage from another iPhone user or a forwarded text from a non-iPhone user, neither one of them will "sync" when I delete the conversation from one device - the conversation remains on one device even after deleted from the other (and even after executing the "Sync now" command in Messages on macOS).
 
The only other thing I can think of is to completely sign out of iCloud on all devices and sign back in. Pain in the butt, I know.... I generally delete all of my texts, but I'm pretty sure the deletes do sync across all devices. It seems to me the only time I've had issues is when the texts were SMS, from non-Apple devices.

If you don't have messages in the cloud enabled, then deletes don't sync across.

If it's already enabled, disable and re-enable it on all devices (you don't need to sign out/in of iCloud, just toggle the messages option).

DING DING DING! Wasn't enabled on my iPhone. Never thought to look since everything else was syncing. Not sure why everything else was working without that enabled 🤔 But as soon as I turned that option on with the iPhone, both iMessages and SMSs are deleting from both devices when I delete from either one now.
