We have 3x 7,1 Mac Pro's at work and recently installed some dumb PCIe cards and NVME drives because of problems we had with RIAD 0 on the OWC PCIe drives.
Anyway our experience has been much better. BUT today we had to delete a bunch of files (about 500gb) to free up some space and we ran into the problem I had on my 5,1 which you helped me with above. BUT the difference is we cannot write (as well as 'get info' showing not enough space or the same space as before the deletion occurred) to the drives because macOS thinks there isn't enough space on them.
Is this TM Snapshots? Do we need to delete them every-time we free ups loads of disk space?
