I was unable to even do this with the latest iOS 11 before now getting iOS 12-

How do I delete iMessage apps? Swiping to the left no longer shows any option to delete. Pressing edit also doesn’t allow me to delete. All I can do it turn them off from appearing in the app bar.

Any way to actually delete the apps now?
 
You cannot fully hide them, but you can get the 2nd (new) bar to disappear like it was under iOS 11;

1) Enable iMessage (only temporarily)
2) Compose a new message, select a reciepiant
3) Tap on the store icon on the first bar (the 2nd par should then disappear, no need to send the actual message)
4) Viola!
