I have numerous albums on my iPhone. I didn't intentionally put them there that's for sure. They just appeared. I think they're all music i've bought through iTunes with the exception of a u2 album which i didn't buy at all.

I've deleted things off my iPhone before & found they've been deleted elsewhere & i'm not wanting to make that mistake again.

Basically i want ALL music deleted from my iPhone but to remain on my iTunes.

How do i do that?

Should be able to hook it up to iTunes and then just 'uncheck' the Music section and sync it. The music will be removed from your phone only, but will still be available in iTunes.
