Deleting some of the built-in (shipping) apps?

I thought with iOS 10, you could now delete some of the apps that come built-in, like Calculator for instance? I notice when you press long on an app so that they all start moving with the x to delete them, while Calculator HAS the x, and seems to let you delete it, a few other apps like Health and Clock for instance, don't get the x, so, can't remove.

There are certain apps you cannot remove regardless like phone app.
Apple has a list of removable apps.

Also, it's just hiding, no removing. Apps physically stay installed, just the icon is hidden and related functionality is removed.
