I just upgraded from a 2012 retina MPB (Catalina OS) to a 2021 MBP M1 (Monterey OS). When stacks is enabled on the desktop (by kind), I notice that when minimizing/open a window that the folders on the desktop will shift automatically. This is really irritating me. I remember that on my 2012 Retina it also behaved the same but I can't remember for the life of me how I stopped it from shifting. I want to keep stacks but stop the folders from shifting. Please help!

Explore Finder preferences. In the "advanced" tab you can choose how icons ("desktop" is a folder in icon view) are automatically organized (or not).
