Is it possible to change this from Desktop 1, 2 etc to say Email, Word etc?
And is it possible to always make an app start on that desktop?

I’m sure its a dumb question, but i cant see how..

And yes, i have googled it..:)
 
As far as renaming the Desktops, no, there is no current feature that allows this. The only time it allows something different is when putting an app into full-screen mode and then the Desktop name changes to the name of the full-screen app.

To make an app always open on a certain Desktop, just right-click on the icon in the Dock and there will be an option to always open the app in the current Desktop, or all Desktops. Personally I think they dumbed down that part too much. I much preferred being able to go into the Spaces preferences and predefining apps to Spaces(Desktops) ahead of time instead of one-by-one as they are opened for the first time.
 
Many thanks for the explanation -I'd seen named desktops somewhere in a screenshot, but it must have been for full screen apps. im sure it would be easy to implement..

And you are right, it does seem a retrograde step not being able to pre-assign a space to an app..
