Safari dont opens desktop-version of some pages. Several opens, several not. And i dont know how it works on iOS 14, cause im new iphone user)
even macrumors.com

You can set the Desktop version as the default if you want. Go to Settings > Safari > Settings for Website section > Request Desktop Website > enabled All Websites. Maybe that will make a difference for you.
 
Some websites are designed to show the mobile version if you're on a small screen. It's not really an iPhone thing, just how the website was built.
