Due to different parts available at the time or possibly more efficient design or overheating? How could you tell these differences? Did any iPhones of same model type use different types of chip manufacturers?

Apple tends to adjust things over the course of production of any particular model. Thus, by the end of production of that model you're getting the benefit of what they've managed to fix or streamline.
Other than the iPhone 5 version for T-Mobile which released about 6-9 months after the launch of the iPhone 5 I can't recall any specific revisions. Apple may classify them as such internally, but they really don't want the customer thinking about that. To the customer it should just be 'iPhone'.
Mostly, variations between carrier are what customers focus on though. Some iPhone 7, 8 and X models had Intel modems and others had Qualcomm.
With the iPhone 6s, Apple had two chip makers: TSMC and Samsung. Everyone wanted TSMC because the perception was that TSMC was the better chip - even though Apple tried to claim there was no difference.
In regards to Qualcomm and Intel modems, there were some rumors that Apple was limiting the performance of the Qualcomm modem to match that of the inferior Intel chip so there wouldn't be an issue with customers (the whole TSMC/Samsung thing being an example).
No one knows for sure on that though.

That’s very interesting so could any slight changes be made currently in the iPhone XS/XR models? I did hear about the Qualcomm modems being faster I remember testing my phone and being disappointed I had an intel modem lol
Over the production run? Sure.
But you aren't going to get a spectacular wholesale change. That'll be saved for the next model. Or the one after that.
Apples became very boring as for as for any big changes aesthetically or even inside or software so trust me I wouldn’t expect much it’s why I’ve became so interested in just wanting to know this I figured it would be quite interesting if they would release their different revisions and changes that’d be a cool read.
OK? Compared to the competition? What should Apple do to change their phones ‘aesthetically’? The implemented stainless bands, used a glass back and have the same form as all the other competitors. I mean, it’s a smart phone, not a mechanical high end Swiss watch. If you’re claiming Apples ‘boring with changes aesthetically’, then that same statement applies to all smart phone competitors alike, because there really no different.
All XS and XR come with Intel modems. They just signed the deal for 2020 with Qualcomm
