So, I've never really cared about cameras in phones, and I'm completely lost with the descriptions of the cameras in the SE (2nd gen), 12 mini, 12 Pro, and 12 Pro Max. I need someone to dumb it down in layman's terms:

1) What are the differences in the photos these four would produce in layman's terms (photography lingo and numeric specs go right over my head)?

2) Which of the four models would be best for photographing brightly-lit artwork (paintings) and why? Would there really be that much of a difference between the SE (2nd gen), 12 mini and the Pro models in this situation? Would one capture more detail in a close-up object like a painting, or are the differences more about lighting and the width of the shot?

How about if I make the question simpler: Which of the 4 phones would be best for photographing brightly-lit 2D artwork (like paintings and illustrations)? Would there be a noticeable difference at all in this scenario?
 
That sounds like the easiest type of photography, where you are controlling the light and the proximity and the angle and nothing moves. They'll all be fine with that.

The 12s all have better cameras than the se by a margin. The pro models have the telephoto lens (fractionally better still in the pro max) but that's not useful to you for this job.

For this scenario they should all work about equally. The majority of the improvements in the 12 phones are for low light photography. Many reviewers mentioned that in bright light, the SE took photos that were almost indistinguishable from the 11 Pro.
 
SE have the same camera as the iPhone 8, enhance by the A13. The 12 have way better spec’ed cameras, better for low light/indoor/outdoor photography.
