I'm ordering the mini-DVI to video adaptor from Apples website tomorrow, and I also need a 1/8" to dual RCA (Stereo) cable. My question is: Are there restrictions as to what kind you can use with a Macbooks?
Also, does anyone know of a reputable website that sells them?

Ummm.... Digital = optical RCA = Analog
Conceptual disconnect here.

Your Analog Stereo Headphone output of the Mac can use a standard 1/8" stereo Minijack to 2 x RCA cable that you can get at RadioShack or wherever.

But it ain't digital. On some Macs, the Optical Digital output shares the same port on the Mac -- and it uses a fiber optic cable with an 1/8" adaptor to go to a TOSLINK optical input on a digital decoder or digital-capable receiver
