Disable Annoying (and distracting) Updates

Hey MacSters, Any advice you have on how to disable Apple's constant, and annoying update notices? Im not very computer literate, but I know how to look up avaliable updates, should I want them, but I dont. Im still pissed that their last update to "Mail" has made the screen so 'jittery' that multiple clicks are near-always necessary. I posted about this a while back and the jist seemed that you cant 'go back' to a prior edition. This is my secondary question. To recap: 1) how to disable "updates avaliable" reminders, and
2) can I 'revert' to an earlier edition of Apple Mail? and How to

You can disable update checks in the System Preferences app, under App Store.

Built-in apps such as Mail are updated along with system updates. You cannot go back, unless you revert the entire system to an earlier version of macOS, for instance with Time Machine.

Dear KALLT, thanks for the reply. Ive looked as youve advised, and I have already unchecked all the boxes. I guess I am wondering and still annoyed that the little box at the top right screen still says 'updates available' Why? And the longest I can dismiss the thing is for one day, then it reappears. This is nutty. And I notice, that both external devices and files saved to Desktop hide, conveniently, for Apple, right behind the 'restart' and therefore, 'update' button. This is the new way of the world of manipulation or 'herding' those too 'busy' to notice or be bothered; but not me. Sorry, to proselytize. All you need to do is make sure "Automatically Check" is disabled.

That's just pure paranoia on your part. I guess Mail notifications are part of another one of Apple's grand schemes to manipulate you into checking your mail?
