When you put your iPod in, let iTunes open. Under the Devices tab on the left, click on your iPod. In the main window it should open up some details and options for your iPod. You want to be under the 'Summary' tab, which is the one it should open up to. Mid bottom are three boxes. Just uncheck "Open iTunes when this iPod is connected" and it won't do it anymore!
