I have a 2017 27" iMac with with a busted display, I'm able to use it perfectly fine in macOS with an external monitor but I plan to change OS's on it. As the title says, is there a nvram command or something similar to disable the internal display on boot so I can use the boot picker?
 
No, it still tries to display on the internal display.

I'm installing Linux so I cannot use the Startup Disk options in Settings

My understanding is like following, please correct me if I'm wrong.
While Mac OS is still running, you can select the Linux USB installer from Startup Disk Option.
After the iMac has booted from the Linux USB installer, it will be easier to completely erase the whole internal disk and install Linux on it.
And as the iMac has only 1 internal disk with OS, the first reboot won't be a matter after you unplug the Linux USB Installer.
