Disabling P3 color gamut?

I noticed how background colors in Microsoft Word looked more dull and understaurated than the same screen on my Windows laptop. So I played around and set my iMac screen to standard P3. What do you know? Colors pop much, much more.

This should be the opposite.

Maybe P3 only works on apps specifically designed for it but actually makes colors look duller if an app was designed with RGB in mind?

In non-colour managed systems, yes. macOS is a colour managed system though, meaning it'll automatically detect if content is sRGB, P3 or any other colour space, and map it to the appropriate signal values of the display. Windows generally requires manually specifying the colour space.
Since Microsoft have showed unable to colour manage Windows, perhaps they managed to mess it up with their Mac apps too, in spite of the operating system automatically managing it, unless the software developer explicitly says to macOS "Don't worry about it, I know how to colour manage myself!".
