I restored my new iPhone 8 from a backup of an iphone 6s-already with iOS 11 . iTunes 12.7  doesn't want to recognize my iPhone 8 and every time is asking for a : "Do you want to set it up as a new iPhone or restore from backup?"

Restored few times already but still I cannot put my ringtones on the disgraced new iPhone and my music playlists either. :(
The App store on the iPhone kept crashing every time I was looking to download my purchased , so I tried to use Configurator that works fine with the apps but not with music and tones

Any idea how to circumvent the issue? I cannot return it because I live in Canada and bought it in the States, because if I could I would have returned it already. Not impressed at all with everything!

Click set it up as new. Even if you already set it up on the phone you're just telling iTunes "this is a new device, I don't want it to be restored to the last state of an old one".

Thanks a lot! Too bad I didn't read your answer before, 2 days ago ;)
This morning I just did that by desperation ready to start from scratch and it worked exactly as you wrote
P.s I didn't know I had to click on More Options to receive an email when I'm following a thread
I thought it was automatic as it is on the Apple Forum
