Since you put this in Windows on the Mac, are you talking about encrypting a Mac disk, a Windows disk, both, neither? And if Windows, XP or Vista?

On the Mac side, people have traditionally eschewed FDE in favor of Filevault, which only encrypts the home directory and (separately) the swap, since this is generally considered sufficient. I use Filevault. Just make sure you do full disk clone backups. It's very satisfactory to me. Truecrypt is available, though. Thread about that here.

On the Windows side, I don't have much to add; Truecrypt is generally the top recommendation in XP, but I don't know about any special considerations when using it in Windows on a Mac.

As an aside; TrueCrypt is open source and there is support for Windows, OSX and LINUX. I have used both the Windows and OSX versions and have been able to move encrypted data bases between OS's with full functionality.

Thanks for the reply.

True that I will VM the XP on the Mac, but I will move a lot of data over from XP to Mac. The XP part I think not much of a problem but I have no experience on Mac.

which software do you use for a full disk clone in Mac..

By the way, is there anyway to do a 2 monitor on a Mac mini..

The favorite full disk clone software on OS X is SuperDuper. I use it to back up my Filevaulted disks. The reason I think that you want to use a disk cloner is so that the backup drives are also encrypted. There are other solutions, but I think it's the most straightforward.

VESA wall mount: http://store.apple.com/1-800-MY-APPLE/WebObjects/AppleStore?productLearnMore=MB060G/A

If the link doesn't work, just google "VESA wall mount iMac aluminum" and you'll find it in fifteen seconds. :)
