This is kind of a tricky thing to explain but I'll do my best.
When I add an email address into Contacts, I give that contact a name (first name, and last name).
In the Mail app on my iPhone, the name which I give that contact appears on the emails from that person.
However, in the Mail app on my Mac, the name which I give that contact does not appear on the email from that person. Instead, their "unformatted" name appears. It's the same in Mail on iCloud.com also.
Is there a way to make it so the name which I give that contact appears in Mail, rather than the name which they set up when they made their email address?
