Do 2020 imacs come with catalina or big sur?

Sorry if this is a repeat question, but old related threads all seem pre big sur release.
If i buy a 2020 imac from the apple uk store now will it ship with catalina or big sur?
The software i use isn't compatible with big sur so i want to avoid for for a good while yet.

They will likely ship with Big Sur, but you should be able to downgrade to Catalina as it's the OS that originally shipped with this model.
