In the past i know that Apple Stores have offered “max” or “ultimate” MacBooks pros which usually had i7/512ssd/16gb memory.
Do they offer these models for iMacs? I tried calling my closest Apple store today and was forever on hold and tempted to just make the drive (1 hour) tomorrow to see if they carry one without having to BTO as I need it ASAP.
 
Don't have to drive to an Apple Store. Go through the steps of build-to-order of what you want. Will see options for delivery and pickup from local store: under there will be "see other stores" option.

But as @mrvo said, once you add just one upgrade on a Mac, odds are very high that store will not have it and will need to be BTO. Sure, might get lucky, but...
