I have an Apple Watch Series 3 and purchased several years ago. I am looking buying a new Series 7 or perhaps wait for the Series 8.

I use the Apple Activity app and Steps app frequently to monitor my physical statistics. I intend to use one for exercise while the other for more casual/work/formal settings.

Do the data from both watches merge to any apps that utilise Apple Watch data to a single iPhone? For example, I use Activity app to see if I'm moving enough and achieving my target, and also Steps app to reach 10,000 steps daily. Does say the number of steps / movements from both watches add up?

I have series 4 and 6 Apple watches and so far it seems to be working that way. I just take one off the charger and switch them out. The phone can only connect to one at a time so by default auto switch is enabled so it notices which one is on your wrist.

Yes, data will be added/combined on your iPhone, and also on all paired watch (when switched)
So each device does share the same data from HealthKit
