This is my first time using Mac. Do I need to install the latest Java for Mac OS or nothing needs it as in apps or websites?

Most likely you do not. It's generally not used on websites anymore due to security issues, and apps that need it will prompt you when they do.

I’ve been using Macs on and off since 2014 (mac mini’s and MacBook Pro’s), I’ve never installed Java and my machines have worked perfectly. I would have to say that Java isn’t really needed.

You don't need to install Java UNLESS you have some apps that are Java-based.
I do have at least one app like that, so I need it.

And you can set Java NOT to enable Java content in a browser, in the Java Control Panel/Security under System Preferences. That way, only apps on your Mac that need Java can use it.

Safari itself doesn’t support these kinds of plug-ins anymore, with the exception of Adobe Flash.
